Tomato Confit (Tomate Confitado)

Cherry tomatoes roasted at low temperatures. This process makes the tomatoes very soft, without removing all its moisture. Its flavor will be more pronounced and the process will allow the tomatoes to be stored for longer periods of time.
Total: 1 hr 30 min
1kg of Cherry Tomatoes,
75ml of olive oil
100g of Fresh Garlic
Salt to Taste
Preheat the oven to 300 degrees F.
Toss the tomatoes with the olive oil and salt in a bowl.
In a baking tray, arrange the tomato halves cut-side up with garlic and fresh basil. Cook the tomatoes until shriveled and tender, 1 1/2 to 2 hours.Serving suggestions:
Serving suggestions: Transfer to a serving bowl, top with freshly grated Parmesan and serve with crostini. Use as a condiment for roasted fish or chicken or stir into store-bought tomato sauce to improve the flavor.
We highly recommend you to watch the video above for best results. Remember that every oven is different, so please check your tomatoes so that you don't "over-roast" them.
